Sweet Potato Fritters


1 sweet potato, peeled and grated
¼ cup fresh parsley, chopped + some for garnish
½ tsp Garam Masala
½ tsp garlic powder
Salt & Pepper to taste
2 eggs, whisked
⅓ cup Cassava flour, or Whole Wheat Flour
2 tbsp Avocado oil for frying



1.Combine grated sweet potato with spices and parsley.
2.Add whisked eggs and flour.
3.Combine well.
4.Heat Avocado oil in a medium skillet over medium-high heat.
5.Shape 1 tbsp of sweet potato mixture into a small burger shape and drop in the hot oil.
6.Reduce heat to medium.
7.Cook about 6min per side.
8.Transfer cooked fritters on a paper towel-lined plate to absorb excess oil.
9.Serve with eggs or by itself.
