Chocolate Coconut Cups
1 cup dairy-free chocolate chips, Enjoy Life Foods
1 tbsp coconut oil
2 tbsp coconut butter, Nutiva Coconut Manna
1 tsp shredded coconut, for garnish, optional
6 paper cupcake cups
1.Combine chocolate chips and coconut oil in a microwave-safe container.
2.Melt chocolate chips in a microwave or in a double broiler.
3.Line 6 cupcake cups on a small baking sheet that you`ll be able to fit in a freezer
4.Pour about 2 tbsp of melted chocolate in paper cups.
5.Put in a freezer for 10 min or until solid.
6.Scoop out 2 tbsp of coconut butter and mix well to blend oil and butter.
7.Place about ½ tsp of coconut butter on the frozen chocolate cup and then pour 1 tbsp of remaining melted chocolate over it. Repeat for all chocolate cups.
8.Return dessert back into the freezer or fridge and keep refrigerated until ready to eat.
9.Take out dessert 10min before eating.
