Brussel Sprouts Salad

Ingredients:
2 cups chopped fresh Brussels sprouts⠀
1 cup baby spinach, chopped⠀
8 oz (or more) grilled chicken breast, chopped, optional⠀
4 tbsp slivered almonds, lightly toasted⠀
1/2 Apple, chopped⠀
1/2 avocado, chopped⠀
2 tbsp craisins, optional⠀

Dressing:⠀

Whisk ingredients together. Use as much as you want and refrigerate the rest. ⠀

2 tbsp Dijon mustard ⠀
1 tbsp fresh lemon juice⠀
2 tbsp honey⠀
1/4 cup olive oil⠀
salt & pepper to taste

Instructions

1. Combine salad ingredients and toss in a dressing. Save the rest for up to 5 days.
